St. Patrick’s Day is such a fun day, especially for adults! If you celebrate it, what are your fun plans? And I wanted to do something fun with my kiddo too to celebrate the day. So what’s more than decorating a festive cake with my girl? I can’t say I thought of the whole cake by myself. I found some ideas on Pinterest, combined a few of them and here it is: a cute and easy St Patrick’s Day baking with kids idea that you (and your little ones) can do this week.
Ingredients and instructions for this St Patrick’s Day baking with kids
Ingredients:
- Your favorite cake mix ~15.25oz to make two 8″ rounds (I used Betty Crocker Rainbow Chip Cake Mix)
- Ingredients to bake the cake mix (whatever the box requires, for the one I used: 3 eggs, 1/2c vegetable oil, 1c water)
- Green frosting (I used Pillsbury Funfetti Vibrant Green Vanilla Frosting 15.6oz, one jar is just enough to cover this cake)
- Mint Flavor Creme Oreo, crushed
- Lucky Charms Marshmallows (I picked them out from Lucky Charms Original Breakfast Cereal)
Ingredients: cake mix, green frosting, lucky charms cereal, and mint Oreos (not pictured)
Instructions:
Active time: 20m for cake, 15m to decorate
Bake time: 30-35m for oven time (high altitude baking) and 10m for cooling
- Bake the cake according to the cake mix instructions for two 8″ rounds.
- Level the cake rounds (I don’t have a cake leveler so I just used a knife and eyeballed it).
- Frost the top of one round thinly, place the second round on top. Then frost all over!
- Crush the mint Oreos and place them all around the bottom of the cake. I separate the cookie sandwich and place the cream on the outside so the green creme is visible.
- Place the lucky charms on top and all around, as little or as much as you like!
- Additional sprinkles for more fun! But optional. I used the sprinkles that came with the Pillsbury Funfetti Frosting.
Make two 8″ cake rounds with the boxed cake mix Lucky Charm Marshmallows (picked from the cereal) All baked and cooling on the rack The 2-layer cake is all frosted with green frosting Crushed mint Oreos all over the bottom of the cake Lucy helping put the Lucky Charms on top of cake Lucky Charms on top of cake
And there you have it, a cute idea for St Patrick’s Day baking with kids! We had a blast making this cake together. I baked, assembled and frosted the cake. And once the cake is ready to decorate, Lucy helped me with the Oreos and the lucky charms. It was a lot of fun to do with kids and let them have fun with their arty crafty side! Also lots of self control for not eating the frosting hehe.

The only thing I’d have to say is the lucky charm marshmallows do get soggy on the frosting after some time. Even though they become softer and not as crunchy, they’re still very delicious and good looking. The cake will look pretty on your counter for about 1-2 days.
